I love eating breakfast on the road when traveling through middle America. For a start that meal will last you all day long. For another, order ’em sunny side up and those eggs yolks stand tall and are a wonderful almost orange color. Then you take the almost always house made fresh, thick sliced toast to dunk and drag through the yolks and it’s oh so good.
